Pumpkin Chocolate Chip Muffins

  • 1 ¾ cup certified gluten-free oat flour
  • ½ cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/8 teaspoon salt
  • 1 ¼ cup pumpkin puree
  • ½ cup margarine, melted
  • ¼ cup apple sauce
  • 2 tablespoon apple butter
  • 1/3 cup rice milk
  • 1 cup vegan chocolate chips – Enjoy Life brand recommended

Directions:
  • Preheat oven to 350 degrees.
  • Combine dry ingredients.
  • Mix wet ingredients and then stir in dry ingredients.
  • Stir in chocolate chips.
  • Fill muffin tins 2/3 full.
  • Bake 30-35 minutes.
  • Makes 12 muffins.
