- 1 ¾ cup certified gluten-free oat flour
- ½ cup sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 1/8 teaspoon salt
- 1 ¼ cup pumpkin puree
- ½ cup margarine, melted
- ¼ cup apple sauce
- 2 tablespoon apple butter
- 1/3 cup rice milk
- 1 cup vegan chocolate chips – Enjoy Life brand recommended
Directions:
- Preheat oven to 350 degrees.
- Combine dry ingredients.
- Mix wet ingredients and then stir in dry ingredients.
- Stir in chocolate chips.
- Fill muffin tins 2/3 full.
- Bake 30-35 minutes.
- Makes 12 muffins.
